I'm using an RFID module names "UM005" with a serial output (9600 bps/TTL logic), can XBee read these data & transmit it ?

You need to configure XBee module with source and destination PAN ID, channel etc. As this must done everytime module is powered up, so this cannot be done by RFID module itself. I would suggest use a small PIC controller with UART or software UART on it which connects to XBee and configure it once and then forward whatever data comes from RFID reader to XBee module.

I'm doing that every time before plugging the XBee

I don't understand what you mean by that exactly?
I think that I need to configure the XBee once and it still configured even if the module is powered off, and when I powered it again there is no need to configure it again.
I want to send data comes from RFID through XBee to another XBee (coordinator) witch is connected to a PC, hope you understand what I mean

I do understand what you meant by that, I don't have any XBee module handy to test the configuration part but If module stores the PAN ID then once you configure it from PC, you can connect RFID directly to the module. Please test this as you have the modules.

I tested this & it works
I have another issue, the serial output of the RFID module works on TTL logic (0V/5V) but the XBee works with only (3.3V) (this will pose a problem in logical levels) !!!!

I would advice using a level converter or at least on a resistor divider on TX line of controller.
